You can disable a language pair if you don't want to see it in the drop-down list when choosing a language, for instance, while creating a new project.
To do so, go to Settings=>System values=>Language pairs:
And then click the "Disable" button:
You can enable this language pair (the button appears after you disable it) if you want to see this language pair in the drop-down list again:
